This post is from a few years ago when I first started blogging. When I changed sites this recipe was lost in the mix and has not seen the light of day since the change.
And that’s just sad.
The Oatmeal Cream Pies that required this Marshmallow Fluff are still talked about by my husband!
Unfortunately, my current dietary restrictions prevent me from indulging in such marvelous delights. Waa Waa. So, please make some Oatmeal Cream Pies, enjoy them, and share your experience with me so I can live vicarious through you! 🙂
If you read the title, you know this post isn’t about Oatmeal Cream Pies. Those require a filling and that’s where I’m starting today.
Sorry about getting your hopes up with Oatmeal Cream Pies but I promise to share that recipe next week! Today, it’s all about the marshmallow fluff. I’ve read that you can make a frosting type substance for the filling but the marshmallow fluff filling seemed the most delicious.
Thankfully, marshmallow fluff is quick and easy thanks to Martha Stewart! You can head over there to see the original or just read it here. This recipe will make about 5 cups
Lick the Spatula Marshmallow Fluff
- 3 Egg Whites
- 1/2 Tsp Cream of Tartar
- 2/3 cup plus 2 TBSP Sugar
- 3/4 cup Light Corn Syrup
- 1 Tsp Vanilla Extract
- Using the whisk attachment, beat together the egg whites and cream of tartar on medium-high speed. Once it’s light and fluffy, add the 2 TBSP sugar with the mixer still on. Continue to beat until soft peaks form.
- In a small sauce pan, combine water, corn syrup, and remaining sugar and set on medium heat. Bring to a boil and let it continue to boil until the mix reaches 240 degrees. Stir constantly. Remove from heat once 240 degrees is reached.
- Start the whisk going again on low speed. Slowly (very slowly) add the syrup mix to the egg mix.
- Once all the syrup mix is in the egg mix, turn up the speed to high and beat for 5 minutes.
- Add vanilla and mix again for 1-2 more minutes then enjoy your sticky marshmallow fluff!
The mixture may still be a little warm after you add the vanilla. In case you’re wondering, it’s absolutely delicious! Go ahead and lick the spatula and revel in yumminess.
I spooned my marshmallow fluff (with a clean spatula) into a mason jar but any air tight container will work. Store in the fridge.
